Usually it takes a couple of weeks for me to get a new recipe posted here on the blog after making it for the first time, but I decided to share this one as quickly as possible. After the response I received to the photo I posted on Instagram last night, it seems like there are a few mamas out there as desperate as I am to find new ways to get vegetables into their kiddos!

While yesterday was the first time I’d ever made these Broccoli Cheddar Bites, it definitely won’t be the last. Now, I’m not going to tell you that these are going to win any culinary awards, but they’re good. And Archer gobbled them up, so really, that’s all that matters to me!

As for me, I’m a tough critic when it comes to broccoli. Some of you may remember that I developed an aversion to it while I was pregnant and I’ve never fully gotten over it. However, I’ve discovered that I do like it tossed in olive oil and lemon zest then roasted, so we’ve been eating it that way a lot lately. Recently though I’ve noticed that the little guy seems to be getting bored with it served that way, eating fewer and fewer pieces each time I make it.

So, I searched for new inspiration – something that he’d get excited about – and this recipe seems to have done the trick!

Another great thing about this recipe is that it makes enough that you can throw a few patties into a freezer bag and freeze them for another day. From the research I’ve done, it seems like they reheat well if you just pop them into the oven for a few minutes. Once we’ve had a chance to try that, I’ll share the results here. Swapping out the broccoli for other vegetables, and using panko and various other spices in place of the Italian bread crumbs might be future experimentations as well. Will let you know how it goes! Broccoli Cheese Bites

Makes approximately 15 patties. Adapted from Stacy Snacks


Print Recipe

Ingredients:

16 oz package of frozen chopped broccoli, thawed and completely drained

1 1/2 cups grated sharp cheddar cheese

3 large eggs, whisked

1/4 cup finely diced onion

1/4 tsp ground black pepper

1/4 tsp salt

1 cup of seasoned Italian breadcrumbs


Directions:

Preheat oven to 375.


Place all ingredients in a large bowl and stir to combine. With your hands, form small patties and place on a parchment lined baking sheet.


Bake for 15 minutes, flip the patties over, and bake an additional 10 minutes.

    I will try this soon and pray that it works. This kid is so picky that she wouldn’t even eat a crescent roll wrapped around cheddar and a pear because the pear still had skin on it! And that was frickin’ delicious, too!

      Oh boy. I feel for you! Archer drives me crazy with his refusal to eat vegetables sometimes, but other times, he surprises me with what he WILL eat.

    I’m always looking for new ways to fix broccoli. Like you, I do the olive oil/lemon combo quite often and am quickly growing bored with it. Thanks for the new broccoli inspiration!! :)

    Not sure what I did wrong but the ones I made kept falling apart. When I took them out at the 15 minute mark, I wasn’t able to flip them because they were stuck to the parchment paper and would just fall apart while I was trying to flip them :/

    I used sweet potato instead of bread crumbs and they needed a bit longer but were delicious ???
