Ingredients
- 1 tablespoon coconut oil
- 1 yellow onion, finely chopped
- 3 cloves garlic, minced
- 1 tablespoon fresh grated ginger
- 1 tablespoon curry powder
- 1 (15-ounce) can crushed tomatoes
- 1 (14-ounce) can coconut milk
- 1 (15-ounce) can chickpeas, drained and rinsed
- 4 cups chopped packed fresh spinach
- Optional garnish: Chopped fresh cilantro
Instructions
In a large saucepan, heat the oil over medium heat. Add the onion and sauté for 4 minutes until softened.
Add the garlic, ginger and curry powder and cook for 1 minute until fragrant.
