To say that this heavenly cake is wonderful would be a the gross understatement of the century, gang. It’s rich and buttery with a cinnamon crumb filling inside as well as on top. It’s aromatic, sweet, moist and just down right divine.

If you love apples, make it.

If you love fall, make it.

If you love all that is good and wonderful in the world…make it. Make it for your book club, for Sunday dinner, for your mama or your dad, take some to your neighbororslice a piece for your kids. It’s a happy, fall loving treat of that you can be sure.

1. Preheat your oven to 350 degrees.
2. Grab a 9 inch spring-form pan and line it with parchment paper. Spray the bottom and sides with cooking spray. (I haven’t ever tried it in a regular round 9 inch pan, but my thoughts are that it would work out well).

3. Into a medium sized mixing bowl place 1 1/2 C flour, 1/2 C brown sugar, 1/4 C sugar, 1 tsp cinnamon, 1/2 tsp saltand1/4 tsp nutmeg. Toss the ingredients together to combine. Pour 1/2 cup melted butter and 1 tsp vanilla into the bowl.

4. Toss it all together with a fork until it forms some beautiful crumbs.

5. Into your stand mixer place 4 Tb softened butter and 1/2 C sugar. Cream them together for 1-2 minutes. Add 1 egg, 1/2 C sour cream, and 1 tsp vanilla. Mix until well combined (about 2 minutes).

6. In a separate bowl toss together 1 C flour, 1/4 tsp baking soda, 1/4 tsp salt and 1/2 tsp baking powder.

Add the dry ingredients to your mixer and mix for 2 minutes, or until the batter is smooth and silky.

7. Gently spread half of the batter into your prepared pan. It will be a thin layer, gang. Don’t worry, you are doing fine. There is a high crumb to cake ration here. 🙂

8. Peel and remove the core of 1 large apple. I used Golden Delicious, but a nice tart Granny Smith might be preferable, depending on how tart you like your apples. Chop the apple into 1/2 inch chunks and layer them over the top of the batter.

9. Cover the apples with half of the cinnamon crumb mixture.

10. Carefully place the remaining batter onto the crumbs and spread it out with a knife.

11. Sprinkle the rest of the cinnamon crumb mixture over the top.
12. Pop it in the oven and bake for 30-35 minutes or until a toothpick inserted into the center comes out clean. Be sure not to over bake.
13. Allow it to cool on the counter for 15-20 minutes.

14. Run a knife around the side of the pan to help loosen the cake, then remove the sides.
15. To make the glaze combine 1/2 C powdered sugar, 2 Tb apple cider and a dash of salt. Drizzle it over the warm cake.

Serve with vanilla ice cream (and caramel syrup if you have it), or just eat it plain. It’s heavenly, friends. Hope some of you get a chance to try it!

1 1/2 C flour

1/2 C brown sugar

1/2 C powdered sugar

2 Tb apple juice

dash salt
