These Air Fryer Potato Skins use cooked potatoes and take less than 10 minutes to make! Serve these on game-day or as a delicious appetizer!

Making Potato Skins in the air fryer is so easy and majorly delicious. Use cooked potatoes (I like to make the baked potatoes in my air fryer as well - recipe here), then load them up with cheese, bacon, sour cream, and green onions! These will be a hit at game-day or as a party appetizer!

These days I love using theAir fryer, to make everything! My Crispy Parmesan Brussels Sprouts and Asparagus Fries have been a huge favorite with reader. Recently I shared how to make Air Fryer Baked Potatoes, which is how I like to make the potatoes for this recipe. I also typically just Microwave Bacon (recipe here) for the topping because it saves a lot of time and mess.

How to Make Air Fryer Potato Skins:

  • First, you need cooked russet potatoes for these potato skins. Use this method to make Baked Potatoes in the Air Fryer, or just cook them your favorite way.
  • Cut the potatoes in half, lengthwise (so the halves are longer), then scoop out a bit of the potato flesh and set it aside. *Don't scoop too much out as we want to eat the potato too!

  • Drizzle a bit of olive oil over the flesh/inside of the potatoes, then brush around to coat everywhere (a little goes a long way).
  • Add the potatoes skin side down to the air fryer basket. Cook for 5 minutes at 400 degrees (if you need to preheat your air fryer, preheat first).
  • After the 5 minutes, add cheese and bacon crumbles to the inside of the potato (where the flesh is scooped out). Reduce the temperature to 350 degrees and cook for 2-3 minutes.

  • Remove the potato skins carefully from the air fryer and then top with sour cream and green onions. Additional toppings could include jalapeños, ranch dressing, buffalo sauce, awesome sauce, blue cheese crumbles, or whatever you like!

How to Reheat Potato Skins:

  • Add potato skins to air fryer and cook at 350 degrees for 3-4 minutes. Add toppings as desired.

How to Freeze Potato Skins:

You can make a large batch of potato skins and then freeze some to be reheated for later!

  • Make the potato skins according to directions. Do not add sour cream or green onions to the top. Allow to cool completely.
  • Place potato skins into a freezer safe ziplock bag, and remove the air from the bag. Place into the freezer.
  • The potato skins will keep in the freezer for 6 months.
  • To reheat frozen potato skins in the air fryer: Add frozen potato skins to the air fryer basket. Set the temperature to 370 degrees, and 5 minutes. If your potatoes are larger, you may need to add 1-3 additional minutes to cook through.

Serving potato skins as a meal is easy when you add some toppings. Here are some easy suggestions to load them up:

  • Load the potato skins withShredded Buffalo Chickenand top with green onions, blue cheese crumbles, and sour cream or ranch dressing.
  • Make a healthySouthwestern vegetable mixand scoop into the pocket of the potato skin.
  • Add acheesy sauce and tender broccoli over the potatoskin for a delicious hearty meal

Ingredients

  • 4large cooked russet potatoes, cut in half(see notes for air fryer directions on how to cook)
  • 1TBSolive oil
  • dash ofsalt
  • dash ofpepper
  • dashranch dressing seasoning,optional but recommended
  • ½cupfreshly grated Colby jack or cheddar cheese
  • 2slicescooked bacon,chopped
  • sour cream for topping,optional
  • green onions for topping, chopped- optional

Instructions

  1. Using the halved cooked potatoes, scoop out a bit of the potato flesh to make a pocket and set it aside. *Don’t scoop too much out as we want to eat the potato too. Repeat for all potatoes.

  2. Drizzle olive oil over the top/flesh of the potatoes, then brush to coat completely. Sprinkle salt and pepper over potato skins. Sprinkle ranch dressing seasoning over the potato if desired (optional, but I recommend).

  3. Add the potato skins to the air fryer basket and set to 400 degrees and 5 minutes. Remove basket.

  4. Add shredded cheese and bacon crumbles to the pocket of the potato skins. Close the air fryer basket and reduce the temperature to 350 degrees. Set the timer for 2 minutes (cook additional minute if needed). Carefully remove potato skins.

  5. Top the potato skins with desired toppings such as sour cream and green onions. Enjoy!

  • Directions to make Air Fryer Baked Potatoes can be found here.
  • To make potatoes in the microwave: poke holes in the potato with a fork. Place whole potatoes on a microwave safe dish and cook for 5 minutes. Flip potatoes over and cook for 7-8 more minutes or until fork tender.
  • To make potatoes in the oven: poke holes in the potato with a fork. Rub the potatoes with olive oil and season with salt and pepper. Place whole potatoes on a baking sheet. Cook at 450 degrees for 45-55 minutes depending on size of potato.
  • How to Freeze Potato Skins:

    • Make the potato skins according to directions.Do not add sour cream or green onions to the top.Allow to cool completely.
    • Place potato skins into afreezer safe ziplock bag, and remove the air from the bag. Place into the freezer.
    • The potato skins will keep in the freezer for 6 months.

    Looks fantastic and it might be tonight’s dinner. Thanks you for the recipe. Just want to let you know when I was reading the post I got a bit confused by this:

    “After the 5 minutes, add cheese and bacon crumbles to the inside of the potato (where the flesh is scooped out). Reduce the temperature to 35 degrees and cook for 2-3 minutes.“

    I do believe you mean 350 degrees, right? I’m sure it was a whoops, but wanted to make you aware of it. Thank you again so much for this recipe.

    While the potatoes were in the microwave I air fried some bacon in a silicon pot to capture the bacon fat, then I brushed that on the potatoes instead of the olive oil. Good recipe 😁
